Wine tasting Trabucchi d'Illasi
Wine tasting of 3 or 5 wines of choice, in balance of tradition and biological innovation.
A wine-growing estate in the middle of the beautiful Valpolicella and with respect for nature. With one of the first organic productions and a modern and perfectly technological cellar hidden under a vineyard. The winery run by Giuseppe Trabucchi consists of 28 hectares, 22 of which are vineyards and 6 are olive groves. Having been certified for organic production for more than 20 years, the winery cultivates its vineyards with the utmost respect for the environment and the ecosystem and bans any chemical treatment, aiming at maintaining the health and integrity of the plants. The aim of the winery in cultivating its vineyards is to produce wines that embody the specific characteristics of the land in which the vineyards grow. It is not only the soil that contributes to this identity, but also the solar coordinates, the latitude and the climate: all these elements create an unrepeatable one-of-a-kind wine. You will visit this wonderful wine-growing estate and taste 3 or 5 wines that are representative of the company's philosophy, to be chosen among the following:
Valpolicella biologico "Un anno" DOC 2015
The organic certified Valpolicella DOC "Un Anno" shows all its freshness and natural depth in the glass. The wine is produced with respect to nature and biodiversity and knows how to use the characteristics that the exposure, the soil and the climate of this valley give to the grapes. Its dark ruby colour, intense and unmistakable aroma and unique taste derive from this unique terroir. The nose is layered with fruity nuances (cherry, blackberry, currant jam) and a slightly grassy touch. The fresh and satisfying taste is characterized by a pleasant balance.
Valpolicella Superiore "Terra di San Colombano" DOC 2010
A rich, full and juicy Valpolicella Superiore, which owes its uniqueness to a very particular terroir with moraine and stony soils that drain the rain best. Exposure to the south or south-east ensures excellent solar irradiation, while the temperature difference from day to night is favourable for the development of the grapes. A wine that fully respects biodiversity and nature, in line with the philosophy of the company. The nose is rich in ripe prune, black pepper and nutmeg and leaves pleasant menthol and balsamic notes in the mouth, with a lasting and challenging finish. The grape varieties used are Corvina Veronese and Rondinella. The harvest takes place in the first or second decade of September. Harvested by hand in wooden baskets, the cellar selects only the best grapes. A short period of drying is followed by destemming and then gentle pressing. The fermentation takes place in stainless steel tanks for about 15-20 days. The ageing takes place in French oak barrels for 12 months, followed by a refining in bottles.
Valpolicella Superiore "Terra del Cereolo" DOC 2007 and 2008
Terra del Cereolo is a Valpolicella Superiore produced with a part of dried grapes. The fermentation takes place in stainless steel tanks and the ageing in barriques and French oak barrels for 10-15 months. The nose is deep, clearly fruity and soft. The wine offers an intense and varied bouquet where notes of currants and ripe raspberries alternate with spicy nuances of cloves and licorice. With a well-balanced taste, the sip is full-bodied and intense, with great substance and juiciness. Long and fruity finish.
Amarone della Valpolicella DOC 2009
The Amarone della Valpolicella by Trabucchi has established itself as one of the most successful interpretations. It is in fact a red wine of great elegance, produced with organic methods, and the result of the typical Appassimento drying technique, which lasts until January. It is left ageing in barriques and barrels for 24 months. Intense ruby red with violet reflections and in the nose the quintessence of this wine typology, thanks to deep notes of prune, dried citrus fruits, candied fruit and cocoa. In the mouth it is intense, soft, long and smooth and shows delicate fruity notes with hints of licorice and chocolate. Very long and persistent finish.
Recioto della Valpolicella DOC 2007
The Recioto della Valpolicella is a classic and one of the oldest wines in Italy. It has its roots in the Rhaetian wine that was produced by drying grapes with the Appassimento method more than two thousand years ago. It is ideal as a dessert wine. For its production, the Corvina, Corvinone and Rondinella varieties, together with other local vines are used. They are dried on racks or bamboo reed mats from September to March, resulting in an average weight loss of about 80%. Intense ruby red colour. The nose offers a variety of fascinating aromas of dark chocolate, tobacco, cocoa, plum jam, dried fruits and sweet spices. The palate is full-bodied, warm, sweet and velvety. It leaves a long-lasting chocolate and hazelnut note in the mouth.
IGT Veneto Bianco Biologico "Margherita" 2014
The organic certified Veneto IGT Margherita is a still and dry white wine made from Garganega grapes and a small percentage of the aromatic Moscato and Trebbiano grapes. Most of the ageing is done in stainless steel tanks, whereas a small amount ages in barriques. In the glass it shows a straw yellow colour with golden reflections. In the nose it is sophisticated with notes of cedar, mint, lavender, oleander flower, pear and yellow plum, on a light and pleasantly aromatic background. When drinking, it is pleasant, well-balanced and very fresh.
IGT Veneto Rosso "Dandarin" 2005 and 2007
The red wine is named after the location of the vineyards in a locality called Dandarin, in the municipality of Illasi (Verona). The area is particularly suitable for cultivation thanks to its southern exposition, the soil with excellent drainage of rainfall and the foothills, which guarantee the right temperature difference between day and night allowing the grapes to dry. The grapes (Corvina, Corvinone and Rondinella with an addition of 30% Teroldego and Syrah) undergo a short period of drying resulting in an average weight loss of 15%. The destemming takes place in October, followed by the fermentation in stainless steel tanks at controlled temperature from 15 to 20 days. The final ageing is held barriques and oak barrels for 12 months. The colour is intense ruby red, limpid and consistent. The nose is complex and fine, with notes of red fruits and blackberries on a balsamic background of sweet spices and tobacco. In the mouth, it is characterized by its smooth and warm character. A definitely tannic wine, soft, well-balanced and particularly spicy.
